For me, this begins in the kitchen. I’ve decided that my current recipes on our weekly menu have become stale and need to be completely overhauled. I’ve also decided that I need to start making Peace with my Kitchen. Lately the shiny counter-top appliances and gadgets that fill our kitchen have been used with little love or just merely abandoned because of my lack of recipe repertoire along with a lack of kitchen meal creativity. No time like the present to start introducing new and exciting meals that are wallet friendly, delicious and nutritious.

Cauliflower is first on my list to learn what and how to make it more appealing to eat for myself and my family.  Honestly, I don’t like cauliflower raw or cooked. However, I DO and mean DOOOOO love pizza. So when I was flipping through this awesome cookbook, Cooking with Coconut Oil  (affliate link) by Elizabeth Nyland I saw she had a Cauliflower-Crusted Pizza recipe. The list of recipes on the ‘must try’ list from this book is huge. I’ve have post-it notes on more pages on the ‘must try’ list then ‘not trying’ list. Needless to say, 90% of this book is going to be tested, all the while with a huge smile on my face. This I know because the beautiful pictures (I love cookbooks/recipes with pictures. no pictures, no buy/try) I will be back in my kitchen wanting more goodness.

Cooking with Coconut Oil This cookbook has 224 pages with 70+ recipes all with visually pleasing pictures. Seeing as how this is a new year with new adventures, goals, beginnings and fresh thoughts and actions I was determined to give this recipe a try.  Surprise!!! The recipe passed the picky husband, toddler and momma taste test. It was devoured in minutes. Wish I made two.
