As a celebration for sticking with my new year, new me resolution the baker in me needed to find more recipes.

Check out these delicious Paleo Apple Cinnamon Muffins. They are moist, tasty and a great snack for hubby and I. We chose to limit how much of these treats to give ‘Bug” due to the little bits of almonds in them. His digestive system is still developing so we don’t want to overload it with hard foods such as almond bits.

APPLE CINNAMON MUFFINS

Prep Time: 10 minutes       Cook time: 12-15 minutes

Ingredients:
Dry ingredients

  • 2 cups of ground almonds (in a food processor ground whole almonds until they are little bits. This is usually the stage right before the almonds turn into a flour texture. You don’t have to do this as you can use almond flour. I like a little crunchiness)
  • 1/4 cup arrowroot flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 2 tbsp cinnamon
  • *2 tsp ground nutmeg

Wet ingredients

  • 1/4 cup coconut oil (melted)
  • 1/2 cup honey
  • 1 egg
  • 1 apple (cored, peeled, shredded)
  • 1 tsp vanilla extract

Preparation:

  1. Preheat oven to 350 degrees
  2. In one bowl, combine all dry ingredients (exclude nutmeg) using a whisk
  3. Combine all wet ingredients (exclude apples) in a separate bowl, whisk all ingredients together
  4. Next mix wet ingredients into dry ingredients, whisk together
  5. Add shredded apples
  6. Mix well
  7. Grease muffin tray or use muffin liners to avoid sticking
  8. Fill tray with mix then gently sprinkle ground nutmeg over top each muffin
  9. Put in oven and wait for a whole bunch of yumminess to come out
